Desserts
Makes 4 servings
¾ cup plain lowfat yogurt (may use fat free) 2 tablespoons brown sugar 1 teaspoon pure vanilla extract ⅓ cup heavy cream 4 medium bananas 2 tablespoons unsalted butter, melted 1-2 tablespoons chopped candied ginger
Place yogurt, brown sugar and vanilla in a medium bowl. Stir with a whisk until smooth. Whip cream until stiff peaks form. Fold into yogurt mixture. Refrigerate until ready to use. (If preparing more than an hour ahead, add a whipped cream stabilizer such as Whip-It to the heavy cream when whipping to prevent it from weeping. This can be found in gourmet specialty food stores and many well-stocked grocery stores.) Slice bananas on the diagonal into half-inch slices - the longer the better for ease in turning. Place in a bowl and drizzle with melted butter, toss very gently to coat evenly. Preheat the Cuisinart™ Griddler in the open grill position to 350°F. When indicator light signals that the grill is ready, arrange the bananas evenly spaced on both sides of the grill. Grill for 2½ to 3 minutes on each side. Arrange in 4 dishes and serve with Vanilla Yogurt Cream. May also be served with ice cream.
A great dessert for the summer months and it only takes 15 minutes.
A little goes a long way when using Stevia. We recommend using only 1 tablespoon of the Stevia powder but if the ice cream is not sweet enough, try adding some blended frozen fruit as well.
There are many alternative sugars on the market now, including coconut sugar (also referred to as “coconut palm sugar.” Its taste is similar to brown sugar, but has a lower-glycemic index than both brown and refined white sugars. Be sure to find a brand that is 100% coconut (palm) sugar, and not one mixed with other sweetener additives.
A perfect ending to a summer meal.
