Avocado Toast
Ingredients
- 4 slices (½¾-inch thick) rustic bread
- 1 medium to large ripe avocado, pitted
- ½ teaspoon fresh lemon juice
- ¼ to ½ teaspoon sea salt (to taste)
- Pinch freshly ground black pepper
- ¼ cup grape tomatoes, quartered (optional)
- 2 teaspoons raw pepitas (hulled pumpkin seeds)
- ¼ teaspoon chili flakes or paprika
Preparation
- Toast the sliced bread in the Cuisinart Toaster Oven, preferably to a medium-light doneness.
- While bread is toasting, prepare the avocado topping. Combine the avocado, lemon juice, salt, and pepper in a small bowl. Mash with a fork to desired consistency.
- Once bread is toasted, divide the mashed avocado on top of each slice. Top with the tomatoes, if using, pepitas and chili flakes or paprika.
