    Ingredients
    • 4 Fresh Nova Scotia Lobster – split in half, tomalley-removed
    • 1 cup (250ml) Fresh Flat Leaf Parsley – leaves picked and fine slice
    • 4 Garlic Cloves – peeled and grated
    • 1 Lemon Zest
    • 1 cup (250ml) Unsalted Butter – softened
    • 2 tbsp. (45ml) Extra Virgin Olive Oil
    • Flaked Sea Salt to taste
    • Fresh Ground Black Pepper to taste
    Instructions
    1. Plug in Cuisinart Griddler™ Deluxe, insert integrated drip tray in place
    2. Turn reversible plates with grill sides out
    3. Select 1 of 6 preset heights on adjustable top cover on right of Griddler™ and unlock for charbroiling
    4. Preheat upper and lower plates to 450°F
    5. Combine butter, olive oil, lemon zest, parsley and garlic in the Cuisinart Elite Collection™ 4-Cup Chopper
    6. Pulse on Chop, 10 times, then process for 15 to 20 seconds until smooth
    7. Pierce the lobster head with knife tip, splitting lobster from the head along the shell to the tail
    8. Gently remove the tomalley, place the lobster upright on griddle, season with slat and pepper
    9. Spread compound butter evenly across the entire lobster half
    10. Charbroil on high until shell turn red and top is golden brown, serve with lemon
    11. Cool Griddler, clean with scraping tool, remove plates and wash with soap and water
    12. Remove integrated drip tray, wipe out with paper towel, wash with soap and water

    Ingredients

    Potato Celeriac Latkes

    • 6 Yukon Gold Potatoes – peeled and shredded
    • 1 Celeriac Root – peeled and shredded
    • 1 Yellow Onion – peeled and fine slice
    • 4 Whole Large Eggs
    • 3 sprigs of Fresh Thyme – leaves stripped
    • 6 tbsp. (90ml) Unsalted Butter
    • Flaked Sea Salt to taste
    • Fresh Ground Black Pepper to taste

    Apple Plum Sauce

    • 5 Gala or McIntosh Apples – peel, core and quarter
    • 5 Blue Plums – slice in half and remove pit
    • 1 cup (250ml) Apple Juice or Water
    • 1 cup (250ml) Dark Brown Sugar
    • 2 Whole Cinnamon Sticks
    • 3 tbsp. (45ml) Unsalted Butter
    • Flaked Sea Salt pinch
    Instructions

    Potato Celeriac Latkes

    1. Fit the Cuisinart Griddler® Deluxe with two griddle plates and preheat both to 450 ̊F (220 ̊C)
    2. Squeeze excess water from shredded potato, combine with celeriac, onion and thyme
    3. Whisk together eggs until combined, season with salt and pepper
    4. Pour egg mixture over shredded vegetable mixture, fold together
    5. Brush butter on Griddler® Deluxe, form pancakes to desired size, sauté until golden brown, turn
    6. Sauté both sides until golden brown, turn out on paper towel to remove excess oil
    7. Season with salt and pepper, serve whole or in wedges with apple-plum sauce

    Apple Plum Sauce

    1. Combine all ingredients in the cooking pot of the Cook Central® 4-Quart Multicooker
    2. Cover and set to Slow Cook on Low for 4 hours cook until tender
    3. Once unit switches to Keep Warm, remove the whole spices
    4. For a chunky sauce, use a potato masher to mash apples to desired consistency
    5. For a smooth sauce, transfer apples to a fine mesh strainer and press through with ladle
    6. Once the apples have passed through the strainer, and return smooth apples to the cooking pot.
    7. Keep sauce on Keep Warm for serving, or cool to room temperature and store in the refrigerator
