Ingredients

  • 2pounds fresh or frozen (thawed)
  • cut sweet corn
  • 20ounces lima beans, thawed
  • 1pound zucchini, cut into
  • 1-inch pieces
  • 1red pepper (8 ounces), cored, seeded and diced into ½-inch pieces
  • 1cup chopped onion
  • 2cans (14 ounces each) diced tomatoes, drained, ¼ cup juice reserved
  • 1tablespoon instant tapioca
  • 1teaspoon kosher salt
  • ½teaspoon freshly ground pepper
  • ½teaspoon thyme

Preparation

  1. Combine ingredients with reserved tomato juice in ceramic pot of the Cuisinart®
  2. Slow Cooker.
  3. Cover and press the on/off button to turn the unit on. Set time to 5 hours and press
  4. Low; slow cooker will automatically switch to Warm until ready to serve.
