A healthier, vegan-friendly alternative to traditional Caesar dressing, this recipe omits the egg yolks and anchovies and achieves creaminess from soaked cashews and umami flavor from soy sauce.
There are many versions of this recipe, but our take is pretty close to the classic. If you’d prefer not to use raw egg yolks, egg substitute can easily be used.
Traditonal Caesar Dressing is made with a "coddled egg", and may not be considered food safe. Here we substitute cooked egg yolks to get that creamy consistency. The remaining cooked egg white may be finely chopped to add to your salad.
