Ingredients

  • 1garlic clove
  • 1–2jalapeños, cored, seeded
  • and quartered
  • 1small onion (red or white, about
  • 2 ounces), peeled, cut into
  • ½ -inch pieces
  • ½cup packed fresh cilantro leaves
  • 2pounds ripe red tomatoes, cored,
  • seeded and cut into 1-inch pieces
  • 1teaspoon kosher salt
  • 1teaspoon ground cumin
  • ½teaspoon ground coriander
  • 2tablespoons fresh lime juice

Preparation

  1. 1. Put all of the ingredients, in the order listed, into the blender jar fitted with the blending blade.
  2. 2. Pulse until desired consistency is achieved.
  3. 3. Pour over hot pasta, or serve with crusty bread as a fresh topping.
