Spanish Tortilla

A traditional tapas recipe, these can be enjoyed with some marinated olives, a green salad and crusty bread.

Ingredients

  • nonstick cooking spray
  • ½small onion, thinly sliced
  • 1small potato, cut into 12 thin slices
  • ¾teaspoon kosher salt, divided
  • ¼teaspoon freshly ground black pepper
  • 5large eggs
  • chopped fresh parsley to garnish (optional)

Preparation

  1. 1. Spray a 6-cup muffin pan generously with nonstick cooking spray.
  2. 2. Divide the onion slices evenly among the muffin cups. Place 2
  3. slices of potato in each cup and sprinkle with ½ teaspoon of the salt.
  4. Put into the Cuisinart® AirFryer on the oven rack in Position 2. Select AirFry
  5. and set the temperature to 400°F for 10 minutes.
  6. 3. While the onions and potatoes are cooking, beat the eggs and add the
  7. remaining salt and pepper. Once the potatoes and onions are ready, evenly
  8. add the eggs to the muffin cups. Place the muffin pan back into the oven,
  9. select AirFry, and set the temperature to 325°F for 8 minutes.
  10. 4. Remove from cups and serve immediately. Garnish with chopped parsley if
  11. desired.
