Ingrédients

  • 3to 4 pounds boneless, skinless chicken
  • thighs, cut into small pieces
  • 8cups chicken stock*
  • 1½ teaspoons kosher salt
  • ¼teaspoon freshly ground black pepper
  • 6carrots, halved and thinly sliced
  • 3celery stalks, halved and thinly sliced
  • 2thyme sprigs
  • 1bay leaf
  • chopped herbs, for garnish (parsley,
  • cilantro, basil, etc.)
  • ½lemon, for finishing

Preparation

  1. 1. Put the chicken and stock into the cooking
  2. pot of the Cuisinart® Multicooker. Secure the
  3. lid and select Soup. Set the pressure to High,
  4. the time for 20 minutes, and press Start.
  5. 2. When the tone sounds, allow pressure to
  6. release naturally.
  7. 3. Once pressure is completely released,
  8. open the lid. Add the salt, pepper, carrots,
  9. celery, thyme, and bay leaf to the cooking
  10. pot. Secure the lid and select Soup. Set
  11. temperature to High, the time for 3 minutes,
  12. and press Start.
  13. 4. When the tone sounds, press the Steam
  14. Release button to quickly release pressure.
  15. Remove lid and discard the thyme sprigs.
  16. Taste and adjust seasoning as desired. Finish
  17. with a squeeze of lemon and chopped parsley
  18. before serving.
  19. * Using a homemade chicken stock will make for
  20. a heartier soup, but if a lighter soup is desired,
  21. use store-bought broth.
  22. NOTE: For chicken noodle soup, add 1 cup of
  23. egg noodles with the sliced veggies and increase
  24. cooking time to 5 minutes.
