Ingrédients

  • 1pound dried navy beans
  • 8cups water
  • 8ounces thick-cut bacon, chopped
  • 1onion, finely chopped
  • 1garlic clove, finely chopped
  • 3cups chicken broth, low sodium
  • 1⁄3cup pure maple syrup
  • ¼cup packed light brown sugar
  • 2tablespoons Dijon mustard
  • 2tablespoons tomato paste
  • ½teaspoon kosher salt
  • ¼teaspoon freshly ground black pepper

Preparation

  1. 1. Put the beans and water into the cooking pot
  2. of the Cuisinart® Multicooker.
  3. 2. Select Beans. Set the time for 8 minutes.
  4. Press Start.
  5. 3. When the tone sounds, press the Steam
  6. Release button to quickly release pressure.
  7. Press Stop.
  8. 4. Once the pressure is completely released,
  9. carefully open the lid. Drain the beans and
  10. reserve. NOTE: These beans are only partially
  11. cooked at this step. They will finish cooking
  12. with the remaining ingredients.
  13. 5. Select Sauté/Brown, set the temperature to
  14. High, and press Start.
  15. 6. When the unit is preheated, add the bacon
  16. and onion to the cooking pot. Brown the
  17. bacon until it is crispy and the onion is golden
  18. and softened, about 15 minutes. Press Stop.
  19. 7. Add the remaining ingredients, including the
  20. reserved beans. Secure the lid and select
  21. Beans. Set the time to 1 hour and press Start.
  22. 8. When the tone sounds, allow the pressure to
  23. release naturally.
  24. 9. Once the pressure is completely released,
  25. carefully open the lid. Stir to combine. Taste
  26. and adjust seasoning as desired. If the
  27. mixture is too thin to your liking, press Stop
  28. and select Reduce. Simmer until mixture is
  29. thickened to desired taste.
