Originating in West Virginia during the Great Depression, slaw dogs took off across the south with each state creating its own twist. Our hot dogs are based on Carolina-style.

- ¼ cupMeat chili*
- 3 tablespoonsYellow mustard
- ½ cupColeslaw**
- ½ smallOnion, finely chopped
- For Chili*:
- 1 tablespoonOlive oil
- 1Small white onion, finely diced
- 3 clovesGarlic, minced
- 1-poundGround beef
- 1 tablespoonChili powder
- 1 teaspoonPaprika
- ½ teaspoonCumin
- ½ teaspoonKosher salt
- ¼ teaspoonBlack pepper
- ¼ cupKetchup
- 2 tablespoonsTomato paste
- 1 teaspoonWorcestershire sauce
- 1 cupWater
- For Slaw**:
- 2 tablespoonsBrown sugar
- 1 tablespoonLemon juice
- 1 tablespoonApple cider vinegar
- ⅔ cupMayonnaise
- 16 ouncesColeslaw Mix
- 2 tablespoonsFlat leaf parsley, chopped
Preparation
- For Chili*:
- Heat oil in a sauté pan over medium-high heat. Cook onion and garlic until softened. Add ground beef, spices, salt, and pepper. When beef is cooked through, add ketchup, tomato paste, Worcestershire, and water. Cook until liquid is reduced and thickened.
- For Slaw**:
- In a medium bowl whisk brown sugar, lemon juice, and vinegar until dissolved. Whisk in mayonnaise until combined. Add coleslaw mix and parsley and toss until coated. Rest in the refrigerator for at least one hour.
- Preheat grill on high. Reduce to medium and grill hot dogs while warming buns on upper rack. Open hot roll and spoon chili layer across bottom. Top with hot dog, add a little more chili, then drizzle with yellow mustard. Top with coleslaw and garnish with diced onion.
