The Perfect Steak

There are many ways to cook a steak. And most of them work well. I believe that the reverse sear is the best method when grilling your steak. Starting at a low temperature will both help tenderize your meat and ensure you do not overcook it. Finish with a nice sear to get that signature look and steak flavor. A good meat thermometer, good salt and this method is all you need to get perfect results every time.

Ingrédients

  • 1 Steak, sirloin, rib eye, t-bone
  • Kosher Salt

Preparation

  1. Select a steak that has good marbling and the meat is bright red and firm. And preferably at least ¾ of an inch thick.
  2. Season both sides of the steak generously with salt and place on a wire rack. Place into your refrigerator for 45 minutes to an hour.
  3. Before you heat your grill remove steak from the refrigerator and allow to sit until room temperature.
  4. Heat half of your grill to high heat and leave the other side off. Place steak onto cooler side of the grill, cover and cook until steak is 10 degrees lower then desired finished temperature. Move steak onto hot side of the grill and sear about 2-3 minutes a side. Remove and rest for 5 minutes before serving.
