A sweet Danish-like breakfast treat, perfect with a cup of coffee.

Ingrédients

  • 4slices cinnamon raisin bread
  • 2teaspoons unsalted butter, softened
  • 2ounces cream cheese, softened pinch kosher salt
  • ¼teaspoon pure vanilla extract
  • 1teaspoon granulated sugar
  • 2tablespoons apricot jam (or raspberry or strawberry)

Preparation

  1. 1 .Preheat grill in the closed position.
  2. 2 .Brush one side of each slice of bread with the butter.Lay 2 slices of bread on a work surface, buttered side down.
  3. 3 .In a small mixing bowl, stir the cream cheese, salt, vanilla and sugar together until smooth.Divide evenly and spread on top of two of the non-buttered sides of the bread.Spread 1 tablespoon of the jam on top of each.Top with remaining bread, buttered side up.
  4. 4 .Place sandwiches on the bottom grill plate and close.Grill panini for 2 minutes, or until lightly toasted.
  5. 5 .Let rest for 1½ to 2 minutes. Cut in half on the diagonal and serve warm.
