Better than Fast-Food French Fries

Makes about 6 servings

Ingrédients

  • peanut or vegetable oil for frying
  • 2russet potatoes
  • kosher salt and freshly ground
  • pepper to taste

Preparation

  1. Heat the oil in the Cuisinart® 3.4-Quart Deep
  2. Fryer to 325°F.
  3. Cut potatoes into french fry-cut uniform sticks
  4. (about 6mm x 6mm) or into slices ¼ inch or less
  5. thick. As you cut, put the potatoes in a bowl of
  6. ice water to keep them from turning brown.
  7. Drain and dry the potato strips completely and
  8. thoroughly. They cannot be at all wet, or the oil
  9. will spatter and spit. Fry the potatoes in small
  10. batches. Cook for about 3 minutes, remove and
  11. drain on layers of paper towels.
  12. Increase temperature of oil to 375°F. In small
  13. batches again, fry the potatoes for a second
  14. time, this time about 4 minutes, until golden and
  15. crispy. Drain on fresh layers of paper towels.
  16. Season to taste and serve immediately.
  17. Seasoning suggestions: herb blends, Cajun or
  18. Creole seasonings, and chili powder.
