Basic Vinaigrette

Makes 1 cup

Salad dressing is simple to prepare, and much healthier for you than what you could
purchase at the store. This, as the name suggests, is a basic version. Champagne vinegar
is softer in flavor than other vinegars, but you can substitute with white
or red wine vinegar if you prefer.

Ingredients

  • ¼cup Champagne vinegar
  • ½small shallot, peeled and halved
  • 1teaspoon Dijon mustard
  • ½teaspoon kosher salt
  • ¼teaspoon ground white pepper
  • ¾cup extra virgin olive oil

Preparation

  1. 1. Put all of the ingredients, in the order listed, into the blending cup.
  2. 2. Blend until smooth, about 1 minute.
  3. 3. Taste and adjust seasoning as desired. Serve immediately. Dressing can be stored in
  4. an airtight container in the refrigerator for up to 2 weeks
