Ingredients

1 pounds lamb shoulder, cut into 1-inch cubes2 garlic cloves, finely chopped2 tablespoons fresh rosemary, chopped1 tablespoon fresh thyme, chopped3 tablespoons fresh parsley, chopped2 tablespoons dry white wine1 tablespoon kosher salt2 teaspoons coarsely ground black pepper

Preparation

  1. Mix ingredients together well in a large stainless steel bowl. Cover with plastic wrap and place in refrigerator overnight.
  2. Once the meat has rested, assemble the grinder attach- ment fitted with the coarse plate. Attach meat grinderto the mixer. Turn the stand mixer to Speed 3 and grind all ingredients into a mixing bowl.
  3. Form into patties.
