Ingredients
1 pounds lamb shoulder, cut into 1-inch cubes2 garlic cloves, finely chopped2 tablespoons fresh rosemary, chopped1 tablespoon fresh thyme, chopped3 tablespoons fresh parsley, chopped2 tablespoons dry white wine1 tablespoon kosher salt2 teaspoons coarsely ground black pepperPreparation
- Mix ingredients together well in a large stainless steel bowl. Cover with plastic wrap and place in refrigerator overnight.
- Once the meat has rested, assemble the grinder attach- ment fitted with the coarse plate. Attach meat grinderto the mixer. Turn the stand mixer to Speed 3 and grind all ingredients into a mixing bowl.
- Form into patties.
