Ingredients
Birthday cake crumbs:
- 1 cup dry yellow cake mix
- 2 tablespoons vegetable oil
- 3 tablespoons rainbow sprinkles
Ice cream base:
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tablespoon pure vanilla extract
- pinch kosher salt
- 1 cup birthday cake crumbs
*Mix-ins of your choice
Preparation
Make the crumbs:
- Preheat the oven to 300°F. In a medium bowl, stir together the cake mix, oil, and sprinkles until the mixture resembles damp, clumpy sand. Spread the mixture evenly onto a baking sheet lined with parchment, and then bake, stirring a couple of times, until golden and dry, about 25 minutes. Transfer to a wire rack to cool completely.
Ice cream:
- To prepare the ice cream base, put the cream, milk, sugar, vanilla, salt, and birthday cake crumbs into a blender jar.
- Blend on High until completely smooth, about 30 seconds. Transfer to a container, cover, and chill in the refrigerator overnight.
- When ready to churn, assemble the Mix It In Soft Serve Ice Cream Maker with the paddle secured and the dispenser handle in its upright position. Turn on and pour in the chilled base. Churn until the desired serving consistency is reached, 20 to 25 minutes. If the ice cream is not thick enough, pour back into the freezer bowl and continue churning until the ice cream has a soft, creamy texture, checking every few minutes.
- Serve in cups or cones, adding custom mix-ins while dispensing the ice cream.
