Belgian-Style Waffles

Makes 8 waffles

Whipped egg whites make these waffles light,
fluffy and irresistible.

Ingredients

  • 2½cups unbleached, all-purpose flour
  • 2tablespoons yellow cornmeal
  • 2tablespoons granulated sugar
  • ½teaspoon baking soda
  • ½teaspoon kosher salt
  • 3large eggs, separated
  • 2½cups buttermilk
  • ½cup vegetable oil
  • 1teaspoon pure vanilla extract
  • Pinch cream of tartar

Preparation

  1. 1. Combine the first five ingredients in a large
  2. mixing bowl; whisk until well blended.
  3. 2. In either a large measuring cup or separate
  4. mixing bowl, combine the egg yolks,
  5. buttermilk, oil, and vanilla extract and whisk
  6. until well combined. Add the liquid ingredients
  7. to the dry and whisk until almost smooth
  8. (some lumps are OK).
  9. 3. Put the egg whites and cream of tartar
  10. into a separate, clean, large bowl. Using either
  11. a whisk or a hand mixer fitted with a whisk
  12. attachment, whip to medium peaks. Using a
  13. large spatula, add the whipped whites to the
  14. rest of the batter and fold to combine – be
  15. sure there are no lumps of egg white in
  16. the batter.
  17. 4. Preheat the waffle maker to desired setting.
  18. 5. Slowly pour a cup of batter onto the center
  19. of the bottom waffle plate. Close the waffle
  20. maker and turn clockwise to flip. Open the
  21. second waffle plate and add a cup of batter
  22. onto the center of that plate, close and turn
  23. clockwise to flip. When the waffles are ready,
  24. carefully open the waffle maker and remove
  25. baked waffle. Then turn and open the second
  26. waffle plate to remove the second waffle.
  27. Repeat with remaining batter.
  28. 6. For best results, serve immediately.
