      Chili

      Ingredients:
      • olive oil
      • 1 onion
      • 2 garlic cloves
      • 1 pound extra lean beef
      • 4 tablespoons chili powder
      • 2 teaspoons ground cumin
      • 1 teaspoon dried oregano
      • 1/2 teaspoon salt, plus more to taste
      • 1 (28-oz) can diced tomatoes
      • 1 1/4 cups beef or vegetable broth
      • 2 (15 oz) cans red kidney beans, rinsed and drained
      • 2 cups of frozen corn
      • Toppings - avocado, green onions, sour cream or Greek yogurt
      Instructions:

      Chop and mince garlic and onion. Heat few tablespoons of olive oil in a casserole pot over medium heat. Add onion and garlic and cook for 5 minutes, stirring every minute or so. Add ground beef, break up to small pieces. Cook until no longer pink. Mix In all the spices well and stir for 1 minute. Add diced tomatoes, broth, then beans and corn and bring to boil. Reduce heat to medium / low and simmer for 45 minutes. Add more salt if needed, and garnish with your favourite toppings!

      Casserole Lasagna

      Ingredients:
      • 1 pound extra lean beef
      • 6 slices bacon
      • 1 (28-oz) can diced tomatoes
      • Salt and pepper to taste
      • 1 teaspoon dried oregano
      • 2 garlic cloves
      • 3 shallots
      • 4 oz gluten free lasagna noodles
      • 6 oz of grated mozzarella
      • 6 oz cream cheese
      • ½ cup of beef or vegetable broth
      • Fresh basil for topping
      Instructions:

      Preheat oven to 350 °F. Chop and mince onion and garlic. Slice bacon into small pieces. Brown bacon in a casserole pot on the stove. Add chopped onions and garlic with the bacon and sauté for 5 minutes. Add ground beef, salt, pepper and oregano and cook until the meat is no longer pink. At this stage, you can drain the excess fat. Next, add the diced tomatoes and broth and bring to boil. Once boiling, turn off the stove heat and mix in the cream cheese and lasagna noodles. (break each lasagna noodle is 3 or 4 pieces). Stir in well, and cover all the noodles with tomato sauce. Cover with mozzarella cheese. Transfer the casserole pot to the preheated oven and bake for 25 – 30 minutes. For the last 10 minutes, turn oven to 400 °F and cook until cheese is golden brown. Let it cool and top with chopped basil.
