Apricots

Makes about twelve 1-ounce servings
Ingredients
- 2 pounds fresh apricots, peeled, pitted, and cubed
Instructions
- Place apricot cubes in a steamer basket to fit a 3- to 4-quart saucepan filled with one inch of water (or unsweetened apple juice). Place a tight fitting lid on pan and place over high heat. When liquid comes to a boil turn heat down to medium. Steam fruit for 10 to 15 minutes, until extremely soft.
- Place steamed fruit in the work bowl of Cuisinart® food processor fitted with metal chopping blade. Process for 20 seconds. Scrape work bowl. Process for 10 more seconds.
- Allow mixture to cool. Store in refrigerator in airtight container for up to 4 days or fill ice cube trays or other containers to freeze.
