Chilled Soup and a Smoothie too!

It looks like we’re heading into another great summer season. Now that we have put the spring rains behind us we can look forward to all the local mouth watering fruits and vegetables. I have made it my mission for the summer to make at least one chilled soup a week to highlight all the wonderful flavours that this season has to offer; and with the new Cuisinart Blend and Cook Soup & Beverage Maker that mission simple.

I know everyone loves a good soup in the middle of winter but how about a nice chilled leek and potato, borscht, sweet melon soup or my personal favourite gazpacho during those warm summer evenings. The options are endless.

Here is a recipe for a great avocado and lime summer soup.

 
Chilled Avocado and Lime Soup

Ingredients:
  • 2 large ripe avocados
  • 750 ml 18% cream
  • 6 standard ice cubes
  • 2 limes zested and juiced
  • 2 tsp salt
  • 1 tsp white pepper
  • 4 tbsp thick Greek style yogurt
  • 1 bunch finely sliced chives

Method:
Place the avocado, cream, ice cubes, lime juice and zest in your Cuisinart Blend and Cook Soup & Beverage Maker.

Blend starting with speed 1 gradually rising to speed 3 until completely smooth. Taste your soup and season with salt and pepper.

Pour into four serving bowls and garnish with yogurt and sliced chives.

Why not try a quick Strawberry smoothie for dessert. This blender crushes ice in seconds, perfect for all your frozen your drinks. Simply take a couple of handfuls of locally grown strawberries a couple of ice cubes and a cup of low fat yogurt and blend for a perfect warm weather treat.
